Cooktown diced bacon lardons 200g
400g penne pasta
1 onion chopped
A jar of roasted red peppers, 200g
2 garlic cloves, finely chopped
200g cream cheese
2 tbsp tomato puree
55g parmesan grated
1 tbsp oil
1/2 tsp chilli flakes
1 tsp paprika
1 tsp fresh sage
(optional)
2 tbsp milk
Penne pasta with bacon and red pepper sauce

Cooktown diced bacon lardons 200g
400g penne pasta
1 onion chopped
A jar of roasted red peppers, 200g
2 garlic cloves, finely chopped
200g cream cheese
2 tbsp tomato puree
55g parmesan grated
1 tbsp oil
1/2 tsp chilli flakes
1 tsp paprika
1 tsp fresh sage

2 tbsp milk
Method
Bring pan of salted water to boil, add pasta and cook until al dente, 10-12 mins.
Heat a large frying pan, add oil.
Fry the garlic and onion until soft but not browned.
Transfer garlic and onions to blender, add jar of peppers and puree until smooth.
In same frying pan, cook diced bacon over medium heat.
Add onion and pepper puree to diced bacon in pan. Add tomato puree, paprika, chilli flakes, sage and stir, cook for 5 mins.
Reduce heat, stir in cream cheese, milk and simmer for 5 mins.
Fold the pasta into the sauce and add the parmesan. Season to taste and serve.
